Lorri While you are searching for an answer--here is a little something to nibble on: (If you show up at my doorstep--I will make you these in barter for my tutoring). 'Better-Than-Cinnabon Rolls' This makes about one and a half pounds of dough. How many rolls, of course, depends on how big you cut them. I mix and knead the dough in the processor, but it can be done in a bread machine. Rise in a lightly Pam-sprayed bowl. Into processor, place: 5 c. white bread flour 1/4 c. plus 2 Tbsp. dark brown sugar, packed (Light brown is okay, too.) 2 tsp. 50% faster yeast (one package) 1 tsp. salt Mix these well. Into 4 cup measuring cup, place: 7 ounces milk 7 ounces salted butter (the real stuff; not margarine) 3 ounces water Heat all in microwave just to half-melt the butter and to bring the liquid temperature to about 115 Degrees. Stir until butter finishes melting and then beat in, with a fork, 2 large eggs. With processor running, pour this mixture into the tube in a steady stream. (If using bread machine to mix, just pour it all on top of dry ingredients.) When it is all incorporated, let processor run two full minutes to knead the dough until it is smooth and elastic. If it is still very sticky (as it may be on a damp day), add more flour, 2 Tbsp. at a time, just until it is still just a tiny bit sticky. (If you get it too dry and firm, add a dribble of water to soften. Dough must be very soft and slightly sticky for light and fluffy rolls.) Place into sprayed bowl more than twice the size of the dough. Let rise at 80 to 90 Degrees until doubled in bulk (about one and a half hours, or so). Set out and let come to room temperature: 1 1/2 sticks butter, cut into slices Mix together: 2 c. white sugar 3 rounded tsp. real cinnamon (Not cassia --- check the label on the container to be sure. Watkins sells the real cinnamon and it is quite different from cassia.) 2 tsp. freshly-ground nutmeg (Yes, freshly ground is quite a bit better.) 3 rounded Tbsp. fine, freshly-grated, orange zest (Not the dry stuff from the grocery; and make sure that you don't get any of the white pith into it as you grate it from the orange.) Set aside. When dough is doubled, pat and stretch it into a rectangle about 18" X 12". Spread softened butter over surface in an even layer, leaving bare about 1/2" all around. Sprinkle sugar over the butter, evenly, until you have about 1/3 c. left; save the rest for cinnamon toast later. Roll from long side and pinch edge to seal. Cut 3" thick slices with a bread knife or other good serrated-edge knife (Saw quickly; don't press down.) Place individually into lightly Pam-sprayed Texas-sized muffin cups, or about 2" apart in large baking pan with sides. Let rise until double in size. Bake in preheated 375 Degree oven for 20 to 25 minutes, just until golden brown. Remove from pan and place on rack, sides touching. Icing: Beat together: 2 c. confectioner's sugar, 2 Tbsp. melted butter, 6 drops 100% pure lemon oil (or 2 tsp. good lemon extract), and enough Half & Half (coffee cream) to make a slightly runny icing. Drizzle all over tops while rolls are still hot, letting it run down the sides. Let stand until icing dries on surface, grab a cup of coffee or glass of milk, and enjoy one while it is still very warm!!! (Hold off on that diet until tomorrow.) Package and freeze what is left, while still slightly warm.
